Life in the Mountains Part 1: Stefan Noll at the Tschuggen

At the helm of the celebrated 5-star Tschuggen Grand Hotel is internationally experienced hotelier, Stefan Noll. Having travelled all over the world working in the hospitality industry he knows what it takes to successfully run a first-class hotel. We had a chat with Stefan to find out a bit more about his experience and what drew him to Arosa and the Tschuggen.

How long have you been General Manager of the Tschuggen?

I have been General Manager of the Tschuggen since 1st September 2017. 

Tell us a bit about your background and previous experience?

I started my career in the hospitality industry with an apprenticeship as a hotel specialist in Germany. Following this three year programme, I moved to London, where I got a job as Assistant Back of House Manager at the Mandarin Oriental Hyde Park. After which I was promoted to Head of Department and a year later I took over the Mandarin’s One star Michelin Restaurant Foliage, this is now known as Heston Blumenthal’s restaurant. I had always wanted to work in Asia and since I could not get a transfer to Asia with Mandarin Oriental, I registered with a London based headhunter, who found me a job as Club Manager at The Leela Goa in India. I was responsible for an exclusive part of the hotel with private Butler service, a private beach and pool, as well as a restaurant dedicated to the Club guests. After two years I was offered Rooms Division Manager at The Legian in Bali, which was part of GHM Hotels as was The Leela. After a year at The Legian, I was promoted to Executive Assistant Manager and became the property’s No.2. In this position I had a lot of exposure to Jamie Case, who was the Executive Vice President at GHM, he mentored me for one year and eventually offered me the General Manager position at The Chedi Club Tanah Gajah, Ubud, Bali. I was very happy to be given my first GM role at 32 years. The Chedi Club was a dream come true, I had a great team, a wonderful property and some of the best owners to work with. Nevertheless, after 2 years I felt that I wanted more than the 20 Villas at the Chedi Club. When GHM was looking for a new General Manager for the Chedi in Chiang Mai Thailand I was offered the position. During our time in Thailand, my wife became pregnant and after one and a half years in Thailand, we decided to move back to Europe. GHM was kind enough to facilitate the move with a position as Hotel Manager for the opening of The Chedi in Andermatt. After a year and a fabulous opening of a great property, I moved to the Grande Dame of St Moritz, the Badrutt’s Palace where I became Executive Assistant Manager. St. Moritz was fabulous, an amazing destination, but after three years I wanted to be responsible for my own operation again and when the Tschuggen was looking for a new GM, I applied and fortunately got the job.

What has been your favourite moment working at the Tschuggen?

My favourite moment at the Tschuggen was when one of my favourite and most regular guests from Chiang Mai came to stay in Arosa. In Chiang Mai, he supported an elephant orphanage with a worldwide campaign. He stayed with us very regularly and for several weeks at a time. I knew he used to stay in Arosa many years back, but one day, he checked into the hotel and it was a great surprise reunion after all those years! We have now stayed in touch. 

What do you love about working in the mountains?

I love nature and I very much enjoy walking in the mountains with my Labrador Luna. Enjoying the scenery, wildlife and nature in all its glory!

Where is your favourite place to ski?

I am more of a cross country skier, but whenever I get a chance I ski in the Tschuggen area with my son.

What influences have you brought to the hotel?

Hard to tell, I guess you need to ask the guests!

What changes has the industry seen in Arosa?

We have seen a steady growth in room nights over the past years.

In your eyes what makes Arosa a special destination?

Arosa is a very attractive destination which caters to many needs. One of the biggest advantages is the accessibility of most mountain restaurants by foot. This is especially good for couples where only one skis – it provides the perfect compromise where you can meet up for lunch even if one person isn’t skiing. The family-friendliness of Arosa also makes it very special in my eyes.

What experience do you want to give your guests when they stay at your hotel?

We want our guests to feel at home and be comfortable at the hotel. Alongside being a five-star hotel we try to foster a cosy yet sophisticated environment.

What new developments are there to the hotel and service this year?

During the spring offseason, we renovated the floors and now have new wooden floors. Furthermore, the rooms have also been equipped with beds made out of all-natural products. 

Where do you like to spend your holidays?

I am a keen road cyclist, so I like to go to places where I can follow my hobby. Last year I spent a week cycling in Spain, which was great.

Which is your favourite room in the hotel?

My favourite room is 808, it was the first room I stayed in when I came for my interview. I guess it’s the lucky double eight which helped me get the job!

What is your favourite dish on the menu in the hotel?

My favourites change with the menu, currently, it is the Japanese Ramen soup at La Collina –  it is absolutely delicious!
