Inside Hotel Adula, Flims; A Voyage into Alpine Hospitality

In the heart of Flims, Switzerland, lies a hidden gem: Hotel Adula. Surrounded by breathtaking Alpine scenery, this family-run establishment has been a firm favourite with Powder Byrne guests for over three decades. After many years of incredible experiences, the property has recently undergone a remarkable transformation under new stewardship of the Michel Reybier Hospitality group.  

To rediscover the essence of the new Hotel Adula, we embarked on an insightful interview journey with key members of their esteemed team, including General Manager Benoit Fichaux, F&B Manager Mircea Constantin Drugarin, Kitchen Chief Giuseppe Marrancone, and FO Manager Gieri Albin. Each shared unique perspectives on the philosophy, history, and exceptional offerings of this Alpine retreat. 


Q: What is the essence of your hotel’s philosophy? 

Benoit Fichaux: The vision for the new Hotel Adula is to be a vibrant hub of warm, contemporary Alpine hospitality. 

Q: Are there any interesting historical facts or significant milestones in the story of your hotel? 

Benoit Fichaux: Back in December 2022, the family-run Hotel Adula was acquired by the rapidly expanding Michel Reybier Hospitality group. Within a year, the entire ground floor, including restaurants, the lobby, reception, and kids club, was beautifully refurbished. With new gastronomic and lounge concepts, Hotel Adula has become a central attraction in Flims. 

Q: Are there any particular services or facilities you recommend for guests? 

Gieri Albin: Flims offers a range of snow-sure slopes and snow parks. Besides from the popular Powder Byrne ski programmes and guiding services, I always recommend on relaxed family days, a carriage ride to Conn followed by lunch and a visit to the “Il Spir” viewing platform provides breathtaking views over the Rheinschlucht. 

Q: How would you best describe the atmosphere you create for your guests, and how does your team achieve this? 

Benoit Fichaux: Upon entering the hotel, guests discover a central chimney leading to cozy couches surrounded by books and pictures. Here, guests can enjoy lunch, dinner, a coffee, or a cocktail, check-in, or simply relax. The seamless flow between the restaurant, bar, and reception enhances the welcoming atmosphere. On Friday and Saturday nights, DJs create a fresh and groovy ambiance in the lounge, while our bartenders offer signature cocktail journeys. 

Q: Are there any new innovations or facilities you are particularly excited to present this season or in the future? 

Benoit Fichaux: Yes, we launched the sixth La Muña restaurant, featuring Japanese-Peruvian Nikkei cuisine in a warm, exclusive wooden room illuminated by a chimney fire. The open kitchen and well-trained team guide guests through fusion dishes like ceviche, gyoza, gyuniku beef, and our signature black cod. 

Q: What sets your hotel apart from others? 

Gieri Albin: Beyond our cozy rooms and new lounge, it’s our loyal employees and their genuine host mentality that stand out. Guests are welcomed by friends who are eager to exceed their expectations.  

Also, of course, our close partnership with Powder Byrne, not only as a group but as a property means guests are really well taken care of at the hotel. 

Q: How important is the gastronomic experience you create for your guests, and can you provide some insights into your culinary offerings? 

Mircea Constantin Drugarin: We embrace Swiss culture and the appreciation of well-balanced meals. Guests can enjoy dishes from Peruvian-Japanese fusion cuisine to beloved international favourites, all crafted by passionate chefs. 

Q: Do you have a favourite dish or beverage that epitomizes the approach of your chef? 

Mircea Constantin Drugarin: Our most beloved cocktail is the Negroni, crafted by our Italian Bar Master and Mixologist Alessandro. Guests can choose the whisky, gin, and vermouth for this stylish cocktail, which is further enhanced by homemade syrups and decorative touches. Alessandro enjoys engaging with guests on various topics. 

Q: How does the location of your hotel contribute to the overall experience for your guests? 

Gieri Albin: Our hotel is ideally located just one kilometre from the ski slopes, easily accessible via our shuttle bus. We offer seclusion for peace and relaxation, with the large Flims forest and the famous Lake Cauma just a few minutes’ walk away.

Q: Do you have a favourite story about your hotel or previous distinguished guests? 

Mircea Constantin Drugarin: Hotel Adula is renowned for its chimneys. While we don’t always disclose the exact number, we guide guests to find them, with the lobby and La Muña chimneys being particularly beloved. Many locals bring their children to share the stories of Adula and its chimneys. 

Q: As a family-friendly hotel, what stands out in your offerings for Powder Byrne families, and how do you make them feel welcome? 

Mircea Constantin Drugarin: Our fully equipped kids club provides guest of Powder Byrne a perfect atmosphere for their children to enjoy. We have a special room with retro play machines inspired by 80’s game rooms, popular with both older children in programmes too. 

Q: How do you cater to the needs of younger guests in your restaurants? 

Giuseppe Marrancone: To engage younger guests, we focus on innovation to stimulate their curiosity while adapting to their specific needs and preferences. 

Mircea Constantin Drugarin: A special experience occurs on weekends when our house guests meet locals. Every Friday and Saturday, a resident DJ creates a vibrant atmosphere, facilitating lively interactions between locals and guests. 

Q: How have your previous roles influenced your cooking approach at the Hotel Adula? 

Giuseppe Marrancone: My culinary journey began in my teens with a passion for Italian cuisine. Moving to Geneva, I was exposed to a variety of cuisines, making Geneva a true gastronomic melting pot. Working in several luxury 5-star hotels in Geneva opened doors to the world of luxury and excellence, shaping my constant pursuit of culinary perfection.
